So….this recipe was a total accident. You ever have those? You get halfway through a recipe, realize you don’t have several ingredients, and then you channel Tim Gunn and “make it work”? Yup, that was me here! But I think sometimes those desperate moments produce the most amazing results!
I’ve been testing out the latest recipes from the new 21 Day Fix Cookbook, FIXATE. HOLY SMOKES! Now I’m a very picky cookbook gal. I usually check out from the library a good 3-4 cookbooks a month and only end up liking 1-2. But almost everything I have tried from this cookbook has been fantastic.
Let’s get into this awesomeness of this recipe! So I went to make the Turkey Sloppy Joes. Sounds awesome, right?
Except when you get 75% of the way through the recipe and realize—WHOOPS—no Worcestershire sauce.
So I left it out, but I feel very strongly that EVERY sloppy joe recipe requires Worcestershire (yea yea yea, I know what you are thinking, then why didn’t I get it? Great question). So PLAN B was spaghetti! I busted out my spiralizer and made some “zoodles” (zucchini noodles) and we poured the Worcestershire-lacking sauce over the top of them. I toasted some whole wheat hot dog buns, covered with grassfed butter (they call it that, I swear they didn’t feed grass to a bunch of butter). Then sprinkled with a little garlic seasoning.
And BOOM. Great meal.
The family LOVED it. The picky-eating husband thought it was a HIT!
Here it is:
Turkey Spaghetti Sauce/Sloppy Joes
- 1 tsp olive oil
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 2 cloves garlic, chopped
- 1 pound raw ground 93% lean turkey breast
- 1/4 tsp sea salt or pink salt
- 1/4 tsp ground black pepper
- 1 1/2 cups marinara (no sugar added)
- 3T tomato paste
- 1T maple syrup or raw honey
- Heat oil in skillet over medium heat
- Add onion and bell peppers and cook for 4-5 minutes
- Add garlic and cook for one minute, stirring frequently
- Then transfer this mixture to a bowl
- Add the turkey to the skillet and cook until meat is browned
- Season with salt and pepper and add the onion mixture and marinara, tomato paste, and maple syrup
- Reduce heat to medium low and cook for 15-20 minutes, stirring occasionally
But what I love most about it is that I can make a double batch, then split it in two. One night we have the zoodles spaghetti, then the next night I re-heat it, add one teaspoon of Worcestershire and 1 teaspoon of hot sauce, and then bada-bing, we have Sloppy Joe’s. I like any recipe that morphs into the next day like that!
OK that brings me to how I’ve been planning my meals lately! I’ve been using the FIXATE cookbook and my own recipe collection to create meal plans where recipes morph into the next day, feed my family, but still allow me to follow my nutrition plan. I make one thing, have it one night, then tweak it a little the next night and it’s an extreme makeover, dinner edition. So I decided that I was going to use one of my meal plans for my next FREE clean eating group. I’m JAZZED about this! Participants in the group will be in a private Facebook group. They will check in daily about how they are doing with nutrition, fitness, etc. I will share tips and videos for how I prep. It’s gonna be a blast!
